Japanify: Namuru (Spicy  Mung Bean Sprouts)

 Japan is known to take ideas from other countries and adapt them for their own. From castella to ramen to hambagu, the Japanese menu is full of food items that could not exist without outside influences. Many of these foods have deviated so far from the original, clouded in cuteness, mildness or sweetness that they have an absent referent to the casual consumer.

Japan's proximity to Korea allows for a lot of adaptation of Korean foods in Japan. Shin-okubo (one stop away from Shinjuku) is the Koreatown of Tokyo and features several blocks of Korean restaurants teaming day and night with hungry Japanese and Koreans. But the influence of Korean food is not exclusive to Shin-okubo. Kimchee is a household favorite with combinis (convenient stores) and izakayas having their own versions available. But like everything adapted in Japan, Korean food tends to be milder and daintier.

Namuru (namul in Korean) is prevalent in many markets and I would often pick up a little packet of soy bean sprout namuru on my way home from work. On a hot bed of rice, it was comfort food ready in less then two minutes.

Namul, the Korean version, incorporates many types of vegetables, roots, fruits, etc. and most commonly appears before your eyes in the ever-impressive banchan spread. For the most part, vegetables are blanched before being seasoned, but this can also vary depending on the ingredients being used. Seasonings include sesame oil, vinegar, garlic and sesame seeds.

The Japanese bean sprout namuru is milder than its Korean counterpart, deleting garlic from its contents. I am personally a big fan of garlic, but to present a garlic explosion amongst other Japanese dishes in a meal, would be somewhat of an interference.
 

  Mung BEAN SPROUT NAMURU

INGREDIENTS
 
400 grams bean spouts or soy bean sprouts
1 tsp salt
1 tbsp la-yu (chili oil)
1 tbsp sesame oil
1 tsp dashi flavoring (i.e. Hondashi aka MSG) optional
2-3 tbsp ground roasted sesame seeds

Moyashi (Bean Sprout) Salad

Bean sprouts are called moyashi in Japanese. It takes less than 10 min to prepare this recipe, so it is great when you need a quick side dish!
Yield: 2 servings
Time: 10 minutes
Ingredients
1 1/4 lb Bean sprouts 2 sticks of celery (chopped) 1 cup sliced carrots (thin)
Spices
2 tbsp Sesame 2 1/2 tbsp soy sauce1 1/2 tbsp sugar 2 tbsp vinegar dash salt

Thai Bean Sprout Salad

Servings: 2-4 Time: 15mins Difficulty: easy


Ingredients:
8 ounces very fresh bean sprouts 2 scallions, shredded 1/4 cup shredded fresh carrots 2 tablespoons chopped fresh cilantro 2 sliced Thai bird chilies  or 2 tablespoons chopped bell pepper (for garnish)
Dressing:
2 tablespoons rice vinegar 1 tablespoon Sriracha sauce 1 tablespoon toasted sesame oil 1 teaspoon lemongrass paste 1 teaspoon fish sauce 1 teaspoon honey
Method:
Place salad ingredients in a bowl. Whisk together ingredients for the dressing and gently toss with the salad. Serve at once

Mixed Sprouts Salad With Coconut (Sundal) 


SPROUTS SALAD PREPARATION

Take the sprouted legumes and cook them in 3 times water in volume, until soft and well done, but not mushy. Drain any leftover liquid (may use it in other stews/soups).Let the cooked legumes cool a little and transfer to a salad preparation bowl. Then add the coconut, carrots, shallots, radish, cilantro and jalapeno* (or green chilies).In a small sauce pan heat the oil. Then add the mustard seeds. Once they start popping (make sure to not let burn), add the dry red chilies*, curry leaves and stir couple minutes.Then add the grated ginger and stir. Add asafoetida* if you prefer. Next add the lemon juice and salt to taste. Add the red chili flakes* if you prefer.Add this seasoning mixture to the salad ingredients and combine well. Adjust the seasonings, salt and lemon juice. Garnish with fresh herbs, shredded carrots and coconut.Enjoy this "Mixed Sprouts Salad with Coconut" just as a salad or as a side dish
